One of my yoga students recently shared a lentils recipe with me, which he had made and thought I would like it as well.
Let me just say, wow, delicious.
He found it online and it is basically this recipe here.
It doesn’t take much work to prepare the ingredients for this recipe.
Here’s what I did:
- 2 cups of lentils
- 2 cups of tomato puree
- 2 cups of chicken stock
- 1 potato diced
- 1 onion peeled and chopped
- 1/2 cup coconut milk, unsweetened
- 3 tbsp. butter
- 3 gloves of garlic
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp kosher salt
- red pepper flakes to taste
Throw all ingredients into slow cooker. Cook on high for 4 hours. Once cooked I added three chicken breasts, which were already cooked.
I added red pepper flakes in my bowl instead of the full recipe. I love super spicy. But not everyone else does.
I added chicken to this recipe. But it could be made vegan without the chicken and you could substitute chicken stock for vegetable stock or even water.
The recipe is delicious, filling and healthy. It is great as leftovers.

We all need to make sure to take care of ourselves.
I find it even more pertinent as a teacher, especially a teacher of yoga.
I teach at multiple places for yoga and cycle, which means I drive from one class to the next multiple times a day.
My eating schedule depends on my teaching schedule for the day. (Sometimes I have an early lunch or a late lunch. I snack multiple times a day. And sometimes my dinner is early or late.)
In the morning I usually wake up and practice yoga (for myself and to work on the sequence I am teaching for the week). After that is my morning coffee and breakfast, which is usually peanut butter (protein) and banana toast. I get myself ready and I am out the door to teach a morning class (cycle, four mornings a week and yoga one morning a week. I usually have two mornings off during the week.)
After I teach a cycle class I need two things: a shower and protein. After four of my five cycle classes I teach a yoga class following soon after.

When you stay at an all-inclusive resort for a week that means you pretty much get all the food and drinks you can consume.
As I have stated in the past (many times) when I am on vacation I enjoy myself. I don’t worry about what I am eating and drinking.
And I know once I return home I will get back on the healthy wagon.
But that being said if someone wanted to eat healthy while at Turks and Caicos Club Med (and I am sure any Club Med) you can still maintain a healthy lifestyle.
The buffet for every meal is full of healthy options.
For breakfast there is fruit, cereal and yogurt. And you could still have an egg or two, cooked to your liking.
For lunch and dinner various salads and fruit are available. There is usually some sort of fish to eat as well.
Every night has a theme. Last night was conch, which is a number of different medium to large-sized sea snails or their shells, according to Wikipedia. The night before Asian, so there was sushi. You get the picture.

My mom comes into town tomorrow night. Curt is heading to Missouri for a high school reunion. So I invited my mom out here for a girls’ weekend.
I haven’t decided yet whether the time she is here I will be counting points and tracking my food.
I am gonna just go with the flow.
But seriously, with all the booze I bought in anticipation of my mom’s visit …
If I decide to not track and indulge I will. And I won’t feel guilty.
I can give myself permission to “slack off” because I know on Monday I will be back on plan.
This long weekend will be full of shopping, mani/pedis, brunches, lunches, lounging on the couch watching Lifetime and SVU, chatting, a yoga class or two, dinners, drinks, movies.
I can’t wait to hang out with my mom, my friend.
It’s OK to splurge once in a while. But it just can’t be done all the time. Picking and choosing events or times will help you keep things under control.

I had three lunch dates this week and one dinner date. That’s a lot of eating out for me, especially during the week.
On Tuesday I had lunch with my friend/co-worker Melissa. We had sushi. Delicious, filling and healthy. I love sushi.
Yesterday I had lunch with my friend/co-worker Stephanie. We had pho (pronounced fuh, rhymes with duh). I was pretty sure pho was fairly healthy. I did a little research.
According to the Livestrong website, pho is high in electrolytes. This site gives the nutritional information to many varieties of pho. So I have to kinda guess where my lunch fits in. I ordered a small bowl, which was anything but small. And I probably only ate half.
Curt and I went out to dinner last night.
(Sometimes Thursdays are my easy day to take off from exercise. But because I had lunch out and knew that we would be eating dinner out I had to jump on the spin bike at work and burn some calories.)

Are you eating healthy? Are you on Plan (aka Weight Watchers Plan)?
For anyone who has tried to lose weight or tried to maintain a healthy lifestyle that can be a question you hear from your friends especially as you are trying to decide where to eat lunch.
I had a lunch date today. I have one on Thursday. And Curt and I are planning on having dinner on Thursday night.
So today when Melissa and I were trying to decide where to have lunch my only request was no Mexican and something with a healthy option. (I love Mexican food, but there are really no healthy options.)
Before we went to Vegas a couple of weeks ago my goal was to get back to my goal weight before hitting The Strip and that pool. I didn’t quite make it. And I ate and drank whatever I wanted while in Las Vegas. There was a birthday dinner last week and then guests in town.
So yesterday I decided it was time to get back to the healthy eating again. And I can’t use eating out as a reason or excuse to not make healthy choices.

Last night I experimented with portobello mushrooms, avocados, soyrizo and a few other ingredients.
My friend James recently told me about an experiment he made in the kitchen and it sounded delicious.
I tried to remember everything he told me and changed mine up a little as well.
I took two portobello mushrooms and placed them on a cookie sheet. I sliced up grape tomatoes (which would have been yummier had they been sweeter) and placed them under the mushrooms. (James recommended pico de gallo.)
On top of each mushroom I placed 1/4 of one of the soyrizo casings. I sliced half an avocado and placed it on top of the soyrizo. Then a little cheddar cheese and last, ripped up a piece of Sara Lee Delightful wheat slice as bread crumbs.
I baked in the oven. I started at 350 and that seemed to be taking too long. So I upped it to 400. 375 is probably ideal for about 20 minutes or so.
I had the second mushroom tonight for dinner. I think it was even more delicious tonight as the mushroom had marinated in its own juices over night.

I was not happy to go to work today. I am not quite sure why. Maybe it was Monday. Maybe because the past few days I slept in rather late for me. But I had quite the attitude today.
A little after 4 p.m. I wandered down to the area where we wait for the work shuttle. Two co-workers were already there and asked if I wanted to ride back to Emeryville with them. (You need at least three in a car to qualify for carpool.) I said sure and the three of us were off. The traffic was light and we got back rather quickly, which meant I ended up at home about 5.
I had plenty of time to get my clothes picked out and ironed for tomorrow. I also had time to pack my lunch for tomorrow and eat an apple without having to scarf it down.

Every day gets a little easier with my Joey gone.
When I am sad or depressed or even stressed I turn to food and alcohol. It’s not the healthiest option. But there are much unhealthier choices.
I took yesterday off from work. I just took it easy. I lounged around and watched movies. Eventually I went to the grocery and picked up some treats for myself.
In the early afternoon I headed to Galaxy Nails for a mani/pedi. They give the best legs and arm/shoulder massages. I was in heaven. (I used to get mani/pedis pretty regularly. But in an attempt to save money I have been holding off.)
After that I grabbed a slice of pizza and a side salad and walked back home. I came home and found a movie called In America on, which I had seen a preview and wanted to watch.
Eventually I got going on the dishes and cleaning up the house a bit as I hadn’t gotten much done over the weekend.

I left the house this morning about 6:15; got to work at 7:15; worked until about 4; headed down to the gym at about 4:15 and jumped on the 5:35 shuttle bus; got back to Emeryville about 6:35; headed to Target and then the grocery for Thanksgiving shopping and shopping for a small party we are hosting this weekend for my gym friends.
I got home a little after 8:15 … more than 15 hours after my day started.
I am sure you wanted to read all of that, right?
It is a little before 9 and I am just sitting down to eat and blog and watch TV. Yes, I must multi-task. It’s the only way I can get anything done these days.
Man, I am so freakin’ tired. But I wanted to eat.
I heated up some brown rice (I had pre-made in the fridge), grabbed some roasted seaweed snacks and my bottle of Rooster sauce. (I also had this for dinner last night as I didn’t get to eat until about 8 and still had to blog, get my clothes and gym bag ready for the next day.)
